Today I decided to try a new dough recipe, because I'm kind of picky about the consistency of my pizza dough. I don't like it too thin and chewy, but I don't like it too thick and bread like either.
I pulled out this little deck of cards and selected the
"Neapolitan-style" pizza dough. The author says that this is the style favored by Italian and New York pizza bakers. I don't know about those guys, so I will have to see for myself.
The trick to this crust is the use of a little cake flour. The author states that this is the way to create a "tender" crust.
After the dough had risen I formed and covered it with sauce.
I added some cheese and more cheese, then topped it off with pepperoni.
Finally, the moment of truth.
My first thought was that the crust was too thick, but after taking a bite; I changed my mind.
It wasn't too cake or bread like. It was a little chewy, but it was tender as promised.
